Egg Pancake with Oats and Quark !

Yes, thats all the ingredients needed to make this easy breezy fluffy egg pancake ! Easy to prepare in less than 15 minutes, this rich and wholesome breakfast is a savior on lazy weekends or any busy mornings !

















This recipe caught my eye when I was glancing through the websites for new breakfast ideas and the richness of the ingredients and the simple procedure stayed in my mind that I almost forgot to note its source. Boy, how sorry I feel for it as it has given me a recipe which has almost become a part of my regular diet and is often made in my kitchen.
You can for sure satisfy all the taste buds of your family members from a tiny toddler to your granny. I vouch for this recipe as it has been tried and has become a regular thing even to my grandma-in-law back home in India!

Ingredients:
Eggs - 2 or 3
Rolled Oats - 2 tbsp
Quark (curd cheese) - 2 tbsp
Salt - a pinch
Ground Cinnamon - 1/4 tsp (optional)

Method :
1. Combine and fold all the ingredients to form a batter of slightly thick consistency.(If its too runny add another 1/2 tbsp rolled oats).
2. Pour the batter over a non-stick pan and cook for about 2 minutes on a medium flame until the sides are cooked. Flip the sides and cook for another 2 minutes or until done.

2. Drizzle with generous amount of Maple syrup or honey or any sugar free syrup and serve warm.






Now lets take few minutes to shed light on the health benefits of the ingredients used.
* Oats are the nutritious comfort grains packed with rich minerals like potassium, iron, folic acid, and many vitamins. Its a good source of fiber and helps regulate our digestive system and thats why, is highly recommended for children, adults or pregnant women who suffer from constipation. The more diverse importance of oats in pregnancy can be found here. Also, consumption of oats is said to have effects on increased milk production in postpartum moms.

* Quark is a spreadable German cheese, which means "curd" or "cheese curd" usually served with Breads or mixed with fruits to make Salads or in desserts or mixed with herbs and spread on Baked potatoes ! It can be eaten like yogurt or simply mixed with jams. An important ingredient in the classic German cheese cake, it has a smooth and creamy texture somewhat like ricotta, slightly sweeter than yogurts and sour creams and is so easy to play around to please anyone's palates.
It is basically curdled milk high in proteins, calcium and phosphate and used extensively here and accounts for half of the total cheese consumption in Germany! Germans just love it and having lived here for so long, its needless to mention about my love for it. * Eggs have good source of proteins, and good fat. Its also a diet food which attracts many youngsters and weight-watchers ! It also provides valuable iron, B vitamins and minerals, including the folate recommended for pregnant women.

Iam sure you would not underestimate this pancake which has all the goodness in it and makes you full for another 3-4 hours !

Notes:
1. For kids, reduce the quantity of ingredients used to half and serve small sized pancakes.
2. If you dont get quark, use yogurt instead. Hang the yogurt in a muslin cloth and drain away all the water from it and use the resulting thickened curd for this recipe.
3. If you dont prefer a sweety breakfast, you can use dips or chutneys instead for side dish. So versatile this pancake isnt it ?
