Turkish Sesame Bread





















This was my first bread i ever baked and will always remain my favourite !!!  It was a love at first sight!
I got this recipe from one of my Turkish friends when i visited her 5 years back and she had baked it for me. It was the first time i came to know that a bread could be baked at home !  I was all new to this place and bread-baking was completely new to me since i come from South India where breads are a little uncommon. I wrote down the recipe then and there itself and tried it the very next day, which was a weekend. I still remember the glow on my husband's face when i surprised him on the table for the morning breakfast.
Well, here goes the recipe....

Ingredients

All purpose flour- 5 cups
Milk - 1 cup
Sunflower oil - 3/4 cup
Lukewarm water - 1/4 cup
salt to taste
pinch of sugar
Fresh yeast - 10 gms
Sesame seeds and/or Nigella seeds
Egg- 1 (Separate egg white and yellow part)

Preparation

1. Sieve the flour in a large bowl.
2. Add milk, oil, salt, sugar, fresh yeast(dissolved in 1/4 cup lukewarm water), egg white. Knead it for approx. 5 min. into a very soft dough. Cover the bowl with a tea towel and keep it in a warm place for an hour.
3. The dough would have risen to double the volume. Knead it once again for a min.
4. Divide the dough into 9 to 10 small balls (walnut size).
5. Take a ball and roll it to a palm size. Apply some oil on the surface.
6. Now, roll it tightly into a cigar shape.
7. Join the two ends to form a circle with a hole in the middle.
8. Apply egg yellow with a brush on the surface of each roll. This gives them a nice golden brown color when done.
9. Sprinkle sesame seeds on the top. This would stick to the egg wash done already on the rolls.
10. Repeat the procedure for all the balls.
11. Place them on a tray by providing enough spacing for each rolls to rise during baking.
12. Bake them in a preheated oven at 220° C for 12 min-14 min.

Nothing beats the smell and satisfaction of freshly baked homemade breads !
